Sweet Chili Chicken Wings

Believe it or not, chicken wings were once considered poor portions best reserved for stocks or sausages. Only in the late 1960s did the now ubiquitous "hot wing" appear in upstate New York. Despite innumerable variants, two things are certain when it comes to appetizer wings: first, the light flavor of chicken pairs beautifully with bold spices; and next, hot wings go wonderfully with a great beer. Our chicken wings are fried crispy then tossed in our housemade sweet chili glaze that has a perfect balance of spiciness, sweetness and tang.
